October Scripture Writing Plan & guess what day it is?

Well, it’s Friday & it’s the end of another fast month that’s gone by.  I wanted to share with y’all the Scripture Writing Plan for October.  Shannon over at Sweet Blessings is so kind to let me share this with you each month.  She has made 2 plans for this month.  One is just a general writing plan- with no theme.  For those of you, who like to have a topic to study, there’s one on “Kindness”.

And by the way, guess what today is?  It’s mine & my sweetie’s wedding anniversary!  We have been married 17 years.  I can honestly say, I would not want to do all this life stuff without him.  Speaking of life stuff- I wanted to share this recipe, I found in the October issue of Southern Living.  Because when is life not about eating?

White Bean & Pork Chili

White Bean & Pork Chili

Ingredients

4 tablespoons olive oil
2 pounds ground pork
1 medium-size white onion, chopped (about 2 cups)
1 poblano chile, seeded, chopped
3 garlic cloves, minced
2 (4.5-oz.) cans chopped green chiles, undrained
1 tablespoon ground cumin
1 tablespoon kosher salt
2 (15.5-oz.) cans white beans (such as cannellini or great Northern), drained and rinsed
3 1/3 cups reduced-sodium chicken broth
6 ounces shredded Monterey Jack cheese (about 1 1/2 cups)
2 tablespoons fresh lime juice
Preparation

1. Heat 2 tablespoons of the oil in a Dutch oven over medium-high. Add pork, and cook, stirring until crumbled and no longer pink, 6 to 8 minutes. Drain pork, and set aside. Wipe Dutch oven clean.

2. Heat remaining 2 tablespoons oil in Dutch oven over medium. Add onion, poblano, garlic, green chiles, cumin, and salt, and cook, stirring often, until vegetables are tender, 3 to 4 minutes.

3. Increase heat to high. Stir in beans, broth, and pork, and bring to a boil. Reduce heat to medium-low, and simmer, stirring occasionally, until heated through, about 40 minutes. Add cheese and lime juice, and stir until cheese is melted. Serve immediately.

I cannot wait to try this.  It looks like something I will be making more than once, that’s for sure!

I hope you have had a good week.  May I say the weather has just been showing out?  It has been cooler & people have been in better moods & y’all, you don’t feel like you are melting every time you go outside.  I have heard Fall is God’s way of saying I’m sorry for Summer.  Because y’all, our summers are hotter than blue blazes.  Until next time, get out your fuzzy socks because you are going to need them & I have to be going because I should be washing clothes.
